• I had to look up what that was, lol no. That stuff looks pretty gross.

Where I am from our local version of “Chinese food” comes with “brown sauce” or “white sauce”

“brown sauce” is soy sauce, water, rice wine vinegar, sugar, ginger, corn starch and I added some 5 spice. Cook it together until it thickens. I think this is kind of a standard stir fry sauce and if I added lime and sesame seeds it would be teriyaki sauce.

“white sauce” I really don’t like and is I think just starch thickened fish broth, I’ve always hated it even before I went vegan.

That’s not what teriyaki sauce is, but I do appreciate you taking the time to explain white and brown sauce. I’m not quite sure what you mean by “standard stir fry sauce,” though.

Teriyaki sauce is soy sauce, mirin, sake, sugar (I prefer brown). You can optionally add aromatics like green onions, ginger, or garlic. Super easy to make.

Makes sense, sake isn’t common where my family is from and wouldn’t be found in products or homes so I never think to use it and don’t have any alcohol in my house lol.

I would say how I learned a standard stir fry sauce is mix of any combination of salty (soy sauce/tamari), sweet (sugar, mirin, etc), acid (rice wine vinegar, lime juice), and aromatics (garlic, ginger, onions, chili) thickened with cornstarch. Can optionally have oil in it but I don’t cook with oil for personal reasons.

Teriyaki only uses a pretty small amount of sake, so I think you could make a good version without it.

That does sound like a good basic stir fry sauce.
